Teamwork key to Sidmouth chefs’ Taste of the West award

SIDMOUTH hoteliers Mark and Jo Seward have returned home from a sunshine holiday to receive a bronze Taste of the West award for Dukes.

“We are delighted, it is a testament to the kitchen team of five chefs and three kitchen porters,” said a bronzed Mark.

“We have been working towards using more and more local suppliers where we can for fresh fish and are now looking at developing good working relationships with exciting local meat suppliers.”

Their choice of local suppliers extends to a range of foods and drinks, with beer and ciders coming from such places as Branscombe Brewery, Otter Brewery, and Yeovil Ales.

Head chef is Darren Smith, who joined Dukes when the Sewards took it on in 2003.

He is joined by chefs Rudi Bell, Shireen Jaroudi, Filip Matuska and Maciej Mosiezivy.

“It is the first time we have had a recommendation,” said Jo, who plans to enter the awards contest again next year.

“Darren is head chef, but it is a team effort, trying to keep a consistency in taste and quality.”

She said Dukes was an inn serving the public as well as those staying for bed and breakfast, which differentiates it from their other hotels.
