Chef Josh McDonald Johnson comes to Sidmouth to help pupils cook up a storm

Students at St John’s International School got creative in the kitchen to create a gastronomic feast.

Talented chef Josh McDonald Johnson, of the Pickle Shack, performed a demonstration and then guided the IGCSE food and nutrition pupils as they filleted, chargrilled, puréed, pickled and then presented their dishes.

The Pickle Shack team judged students on their final presentation skills.

The young chefs succeeded in creating a mouth-watering starter of chargrilled mackerel on a cauliflower purée, with pickled cauliflower, beetroot gel and a rapeseed oil snow.

Food and nutrition technician Tracy Kensdale said: “The pupils really enjoyed the challenge, even the not-so-pleasant task of filleting mackerel.”

The Pickle Shack is a creative food and catering company.
